I just spent a couple of days in Amelia Island where I attended the Salt Cooking School at The Ritz-Carlton. It was a fun and action-packed two days where we learned 12 recipes working with Chef de Cuisine Richard Laughlin and his team. Of course, we indulged in tasting each and every dish we created! One of my favorites was this recipe for Chilled Avocado and Cucumber Soup.
It’s a cool and refreshing dish for the end of summer. Plus, it’s easy to make! Chef Rick gave me a tip that it also makes a great Green Bloody Mary or martini by adding a splash of vodka. Don’t you just love recipes that have multiple uses? I know I do!
