Ingredients

  • 1 shallot, finely chopped
  • 2 cups frozen shelled edamame, thawed
  • 1 pint grape tomatoes, halved
  • 4 oz feta cheese
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup rice vinegar
  • 1 15 ounce can of chickpeas
  • 1 1/2 Tbsp sesame oil
  • salt and pepper to tastes

Instructions

  1. Add the edamame, tomatoes, chickpeas, parsley, and feta to a medium sized bowl.
  2. Pour the sesame oil and vinegar over the edamame mix and gently toss.
  3. Add salt and pepper to taste.
  4. Serve cold.
