Mango Chicken Salad

Ingredients

  • 2 Chicken Breasts – Diced
  • 1 Cup Mango, Diced
  • 1 1/2 Cup Greek Yogurt
  • 1/2 Cup Shredded Coconut
  • 1/2 Cup Red Onion, Diced
  • 2 Limes
  • 1 Tbsp Honey
  • 68 Romain Lettuce Hearts
  • Salt & Pepper

Instructions

  1. Zest one of the limes, then cut both in half and squeeze juice into a medium sized bowl.
  2. Add honey, and a pinch of salt and pepper to lime juice and whisk with a fork until well blended.
  3. Then add yogurt to honey and lime juice and whisk until blended.
  4. Add the rest of the ingredients and mix well.
  5. Scoop into lettuce, wrap, and serve!
