Make sure you've got all your ingredients ready. You'll need apples, flour, sugar, eggs, butter, baking powder, vanilla extract, cinnamon, and a splash of dark rum.

Peel and core the apples, then chop them into bite-sized pieces. Toss them in a bit of cinnamon to highlight their flavor.

In a bowl, combine the flour, baking powder, and a pinch of salt. Set it aside for later.

In a separate large bowl, cream together the butter and sugar until the mixture is light and fluffy. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and the dark rum.

Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix. Gently fold the apple chunks into the batter until they're evenly distributed.

Pour the batter into a greased baking pan, smoothing the top with a spatula.

Place the pan in the oven and bake for about 35-40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
