Lemon Blueberry Cookies Recipe

Gather your ingredients! – flour – baking powder – baking soda – salt – butter – sugar – brown sugar – sour cream – eggs – lemon zest – vanilla – blueberries

In a medium bowl, add the flour, baking powder, baking soda and salt. Whisk together until well incorporated.

In a large mixing bowl, add butter and mix until smooth with a hand mixer (or in a stand mixer). Add sugar and brown sugar and cream together until the mixture is light and fluffy.

Next, add the sour cream and egg, and mix together. Then add the vanilla extract and 1 tablespoon of lemon zest.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Gently fold in the fresh blueberries, being careful not to crush them. Chill dough for about 30 minutes.

In a small bowl, mix together 1/2 cup sugar and 1 tablespoon lemon zest. Scoop cookie dough and roll through the sugar and lemon zest mixture.

Bake for 12-15 minutes, or until the edges are golden brown. You may have to bake them in batches.
