COOKING PORK TACOS: STEP-BY-STEP
Cut the onion in half and thinly slice. Measure out the spices.
Pat the pork loin dry with a paper towel and cut into 1/2 inch strips.
Season pork with spice mixture of cumin, chili powder, and smoked paprika. (Regular paprika will also work, but smoked paprika adds a nice dimension to the flavor). Massage spice into pork strips.
Heat 1 tablespoon of oil in a skillet over medium-high heat. Add onions and cook until they soften (about 2-3 minutes).
Add the pork strips and allow to cook for three minutes without stirring to allow time for them to sear. Stir and continue to cook pork until it is cooked through and onions begin to brown and caramelize (about 3-4 more minutes). Season with a pinch of salt and pepper.
**If you’d like a more tender pork strip, marinate the pork strips in the spice mixture with 1 tablespoon of olive oil overnight.
While the pork is cooking, make a fresh orange salsa and warm the tortillas to get ready to serve.
Serve with sour cream and orange salsa.
HOW TO WARM TORTILLAS
There are two ways you can warm store-bought tortillas. Be sure to have a place ready to keep them warm! You can use a tortilla warmer or simply just a plate covered with a piece of tin foil.
Warming Tortillas In The Microwave: This is the easiest and quickest way to warm tortillas. You can use an actual microwave tortilla warmer (they sell them at most grocery stores as well as Amazon). Or simply wrap the tortillas in a damp paper towel, place on a plate, and microwave for 30 seconds. Once they are warm, cover the plate in foil to keep warm until ready to serve.
Warming Tortillas On The Stovetop: This method of warming tortillas takes a little more time, but gives the tortillas a more toasty flavor. Place a small skillet on the stovetop and turn the heat to low/medium. Add each tortilla to the skillet individually, toasting for about thirty seconds on each side. Place the warm tortillas on a plate covered with foil or in a tortilla warmer to keep warm.
